Have you ever looked into your fridge and thought, "We have no food!" Well that's the situation we were in, so we just threw together what we had and the end result turned out to be one of our new favorite recipes. Quinoa Vegetable Delight 1 cup uncooked quinoa (cook according to packaged directions) 1 bundle of asparagus chopped 1 zucchini chopped About ½ of an eggplant leftover from vegi pizza video. You can look there to get the prep for the eggplant. About 1-2 handfulls of baby kale About ½ a can of leftover of diced tomato About 16oz. of leftover cashew cream from our spaghetti squash video. Avocado oil 1 crushed garlic clove Salt & pepper Water Instructions While your quinoa is cooking(drop in the crushed garlic for flavor), heat avocado oil in a pan and start to sauté the chopped asparagus, zucchini, eggplant until soft, just a couple minutes. Then pour in the diced tomatoes and cashew cream sauce, put in kale and stir together. Season with salt and pepper stir again and lower heat and cover to heat through while the quinoa finishes cooking. If you find that the cream is sticking to the bottom of the pan you can add a little water to loosen it up. When quinoa is done take your vegetables off of the heat and add the quinoa to the vegetable mixture and stir together. Season to your taste and enjoy! I made this as a one pot meal and it was delicious! It is vegan and gluten free. I love making dishes out of whatever ingredients I have leftover in the refrigerator. It doesn’t always come out delicious but a lot of the time it turns out pretty good. Experiment with what you have on hand take risks and see what happens, you may surprise yourself. This dish turned out to be one of our favorites. If we are in the mood for some comfort food this is one recipe I would make again even if I had to go out and buy the ingredients just for this dish.
