This is a dish that my family really enjoyed and I wanted to share it with you and your family. It is a vegan dish flailed with flavor. It's creamy and a completely guilt free comfort food dream! Hope you all enjoy it as much as we did! Spaghetti Squash with Cashew Cream Tomato Sauce and Walnut Meat Prepping the squash: Preheat the oven to 400F while the oven is preheating prep your squash. Slice the squash in half by using a chef’s knife from stem to tail. Spaghetti squash are really tough and hard, so be careful. Once the squash is cut scoop out all the seeds. You can save the seeds and roast them later for a snack or discard them. Place the squash in a roasting pan cut side down (I like to spray cut squash with some extra virgin olive oil and season with salt and pepper, this step is not necessary but I find adds some extra flavor). You can pour a little water in the pan, enough to cover the bottom (this is optional). This can help the squash steam and become tenderer. You can also cover pan with aluminum foil. Place squash in the oven and cook for 30 to 45 minutes. Check the squash after 30 minutes and see if it is tender. When you can easily piece with a fork the squash is ready. When ready remove from the oven and let it cool for about 10 minutes. Use a fork to pull the squash from the peel and separate the flesh into strands. Rack your fork from stem to tail into “spaghetti strands”. You can enjoy your noodles just like this or put my cream sauce recipe on it. Sauce 1 can of organic fire roasted diced tomato 1 can of organic salt free plane tomato sauce 1 small onion chopped 2 stalks of celery chopped 2 carrots chopped 2 - 3 cloves of garlic minced Avocado oil Salt & pepper Walnut Meat 1 cup of chopped walnuts Brags amino acids Salt and Pepper Cashew Cream Sauce About 1 cup of cashews (I soaked half in water for about an hour) About 1.5 cups of water of water Mix all ingredients in a blender Combine the cream sauce with the tomato sauce and YUM you have delicious vegan cream sauce.
