This is a dish I grew up with. My grandmother would make this every weekend to have with dinner or as a snack dip with pita bread or veggies. Every time I take a bite it brings me back to grandma’s apartment in Brooklyn. I hope you enjoy this recipe it adds to your own traditions. It is a popular dip in the Middle East with a tangy flavor. Chick Pea Dip (Hommous bi Tahini) 1 15oz. can of chick peas or garbonzo beans (drain the liquid and save) ¼ cup Tahini (Sesame Seed Paste) 1 clove of garlic ½ tsp. salt ¼ cup lemon juice (fresh lemon juice is preferred. It turns out to be about 1 small lemon) Combine all the above ingredients in a food processor or blender, adding only enough of the saved liquid to meet your satisfaction (the more liquid added, the thinner the dip). Blend 2 – 3 minutes or until it is a smooth paste. To present it at a meal or dip, place in a small platter or shallow bowl. If preferred sprinkle with olive oil on top and garnish with parsley sprigs and lemon wedges. Enjoy it with pita bread or celery, carrots, peppers or whatever your favorite dipping utensil is. You can also use it as a side dish with any fish, Taboulie, Barbeque Chicken, or Shish Kabob.
